Rice Pudding | Dairy Free, Gluten Free Desserts, Vegan Pudding

Old Fashioned Rice Pudding Recipe made Dairy Free, Egg Free, Gluten Free without sacrificing taste:

1/2 cup raw jasmine riceRice Pudding Recipe

1/4 teaspoon salt

6 cups unsweetened almond milk (vanilla variety good too)

1/2 cup light cane sugar – granular kind like camino’s – not the brown sugar kind (can use white sugar)

2 tablespoons earth balance buttery sticks (or other non-dairy margarine)

vanilla (approx 1 teaspoon)

rum – clubhouse (grocery store, approx 1/2 teaspoon or real unspiced rum 1 TBSP)

sprinkle cinnamon on top

pinch of nutmeg – optional

Method:

Pour Milk into a 9 x 13 pan

sprinkle rice, then sugar, then salt evenly overtop

sprinkle with cinnamon & nutmeg

Bake @300°F (300 degrees Fahrenheit) for 3 hours

 

Variations:

  1. add 1/4 cup thompson raisins (or sultana’s)
  2. add 1/4 cup chopped dates
  3. add 1/4 cup currants
  4. add 1/4 cup craisins (especially if using basmati rice)
  5. add 1/4 cup finely chopped crystallized/candied ginger
  6. using short grained rice instead of jasmine – only cook for 1 1/2 hours total
