Did you know baking soda and baking powder can go flat? Baking powder and baking soda will lose their potency after time.
To test to see if it is still good take a tablespoon and pour it in a dish – add a tablespoon of white vinegar:
- if it fizzes immediately and robustly it is still good
- if not – put it in your green bin (environmental recycling) and get some new product
If buying from a bulk store – still test it when you get home in case it’s been sitting on the shelf awhile there too.
My mom learned this from a chef in Barbados while a volunteering in the kitchen on an overseas project. A batch of biscuits which always turn out perfect every time – didn’t – and that was why!
Even the most discerning teetotaler will find them spot on.
