This is the recipe my sister in law Karen on my husband’s side reinvented… it’s smooth and creamy – the salty of the pistachios beautifully offsets the sweetness of the white chocolate. My Gluten Free hubby is able to eat these 🙂 for which he is truly thankful LOL.
- 3 bags good quality white chocolate chips
- 1 14 oz can unsweetened condensed milk
- 1/2 cup Irish cream liquor (Baileys or Cartier is nice)
- 1/2 cup raw pistachios, chopped
- 1/2 cup craisins
Line a 8×8 square pan with foil or parchment paper lightly greased. (100x’s easier to remove from pan later)
In a sauce pan, at low heat, pour in all of the ingredients except pistachios. Stir constantly until white chocolate chips have Almost melted.
Pull off heat and continue stirring until chocolate is completely melted.
Add pistachios and combine into the mixture. Pour mixture evenly onto prepared pan. Let cool until completely until set in the fridge overnight.
Remove fudge from pan and peal off the aluminum foil. Cut fudge into small squares.
Store fudge in an airtight container.
Warning: once you make these… you are sentenced to making them for your friends every year LOL. For full disclosure.
My very conservative church lady mother used to make these from Karen’s recipe (with my Baileys). So, you know, they’ve gotta be good.
